I love to eat, I love to feed people, and I'm a great cook. I joked with my friends that I wanted to write a book where desserts had to be extensively researched, since I have a terrible sweet tooth. My particular downfall is cake.

Once a month we have 'dessert for dinner' night. I'll make four separate desserts. They'll come home from school and eat as much cake and custard and ice cream as they can physically get in their guts. Because sometimes I think, let them just be children.

I was in the Pritikin Center in Santa Monica once, trying to lose 30 or 40 pounds in a month. I'd work... on a treadmill and with the weights, but it was driving me nuts. So I escaped. Tom Arnold picked me up and we went to Le Dome and had tons of desserts.

I love baking cakes and slices and biscuits, but I will only make them if I'm going somewhere with lots of people so I can share them around. I've got a sweet tooth, and I'm not good with discipline, so it's easier if I just don't have desserts in the house.

Adding salt to desserts helps to balance and pronounce flavors. Almost all of my desserts have salt in them. They don't taste salty per se, but if I gave you two of the same item - one with salt and one without - side by side, you would realize something was missing.

In the past few years, we've been doing amazing stuff with desserts. Pastry chefs have been using herbs and spices in their desserts. So vanilla cake doesn't have to be just vanilla, it can have a little thyme. Or you could have a custard with a little lavender in it, which is just amazing.

I fought Dan Henderson in 2009, and I lost, and that was at UFC 100 - UFC 100 was the biggest pay-per-view the company's ever done. 1.6 million pay-per-view buys, watched all over the world, and of course, I get knocked out cold after talking lots of smack leading up to the fight. So I got my just desserts in that one.

I don't do very well with extremes of any kind - extreme diets, extreme fitness - so moderation makes a lot of sense, and Hershey's has really great portion-friendly desserts to help people incorporate treats into their lifestyles so they don't feel like they're depriving themselves and are still living a balanced life.
